How to make – Green Goddness salad

Cooking Classes: GREEN GODDESS SALAD

Ingredients:
8 anchory fillets, soaked in milk, rinsed and dried.
1 green onion, chopped
2 tbsps chopped fresh tarragon
3 tbsps chopped chives
4 tbsps chopped parsley
1 cup prepared mayonnaise
1/2 cup natural yogurt
2 tbsps tarragon vinegar
Pinch sugar and cayenne pepper
1 large head lettuce
1 lb cooked chicken or seafood
1 avocado, peeled and sliced or cubed
1 tbsp lemon juice

Cooking Class Method:
1. Combine al the ingredients, except the lettuce, avocado and chicken or shellfish in a food processor. Work the ingredients unti smooth, well mixed and green. Leave in the refrigerator at least 1 hr for the flavors to blend.

2. Shred the lettuce or tear into bite-size pieces and arrange on plates.

3. Top the lettuce with the cooked chicken cut into strips or cubes. If using crab or lobster, cut the meat into bite-size pieces. Shelled shrimp or mussels can be left whole.

4. Spoon the dressing over the chicken or seafood. Brush the avocado slices or toss the cubes with lemon juice and garnish the salad. Serve any remaining dressing separately.
