12 egg yolks
½ cup sugar

cooking schools : Prepare the egg custard in the usual way. Whisk the eggs and sugar together until the mixture pales. Bring the milk to the boil and stir in the egg-sugar mixture. Reduce the heat and continue stirring until the mixture thickens. For this recipe use 1 cup of the egg custard, using the remainder for other flavored ice cream.

Mash the banana with a fork and add a few drops of lemon juice. Add the banana to the egg custard & blend smooth with a hand mixer. Pour into the bowl of an ice cream maker & set in motion. Spoon into a container & keep in the freezer till needed.

Tips: If an ice cream maker is not available, pour the mixture into a bowl & place in the freezer till part frozen. Remove from the freezer & whisk. Refreeze & whisk thoroughly until smooth. Pour into a covered container & replace in the freezer until required.
